Gareth Coughlan was on the fringes of the first team at Bray Wanderers in 2008 and made his first appearance as a substitute away to Derry City on 11 July. In 2009 Gareth became a regular in Bray's midfield and, in January 2010, he signed for Pete Mahon at St Patrick's Athletic. He made an impressive start to the season, scoring once in 9 league appearances. However a double leg fracture against Bohemians in May ended his season and his contract was not subsequently renewed.

In July 2011 Gareth resumed his career with St Pats having recovered from his injury and was first named as a substitute against Dundalk on 10 July. But he didn't make a senior appearance for Pats that year and he left St Pats at the end of 2011 and signed for Sean McCaffrey at Dundalk on 10 February 2012. Gareth made just 5 substitute appearances in the league before being released by the Lilywhites at the end of June 2012.

Gareth joined Sacred Heart in the LSL after he was released by Dundalk where he played until joining newly relegated Shelbourne in February 2014. His reintroduction to league football came against Longford Town on 15 March 2014 and he went on to have an excellent season, scoring seven times in 20 league appearances, as well as playing in both of Shelbourne's unsuccessful promotion play-off matches against Galway FC.

In mid-December of 2014, Gareth re-signed for new manager Kevin Doherty at Shelbourne. He went on to make twenty-five league appearances for Shels and finished as the joint-highest goalscorer at the club with seven to his name as the club finished fourth in the table.

He went on to make five league appearances during the First Division campaign before it was announced that Gareth had left Shelbourne by mutual consent in June 2016.
