Mathew developed at Home Farm and Belvedere before signing for Bohemians at the start of the 2009 season. He played in a mid season friendly against Wolves in the summer of 2010 and in August of that year he was signed by the Premier Division club without having made a competitive appearance for Bohs.

Mathew made his debut for Wolves in an FA Cup third round game against Doncaster Rovers in January 2011. After enjoying loan spells away to Hibernian and Bury, Matthew returned to Wolves in January 2013 and soon became a key player for the side.

Matthew received his first call-up to the Republic of Ireland senior squad ahead of the friendlies with Switzerland and Slovakia, but had to wait two more years to make his debut. He made his first appearance for his country in a 1-0 friendly defeat to Turkey in March 2018, and made his competitive bow against Denmark in the UEFA Nations League the following October.
