Joe played for Dundalk's u19 squad for the 2015 season before appearing on trial for Cabinteely FC in the pre-season friendly against Bohemians in January 2016. He duly signed for Eddie Gormley's side and scored on his league debut against Athlone Town on the opening night of the 2016 season. He didn't score again until Cabinteely again met Athlone in July when he netted four times in 5-1 win. He ended the season with seven goals from 24 league appearances.

In 2017 Joe scored ten times in 27 league appearances as Cabinteely finished 5th in the First Division.

In January 2019, Joe signed with Bray Wanderers. In December 2020, Joe re-signed with Bray Wanderers having already made 41 appearances, scoring 7 goals, for the Seagulls.
